Recipe Highlight: Carrot Ginger Miso Dressing

Hi Food Swappers!

I told a few of you that I would post the recipe for the dressing that I swapped at our last meet. Here it is! It’s very simple and just requires a blender or food processor.

Please feel free to send any of your favorite swap recipes to us at nolafoodswap@gmail.com and we will be more than happy to post them.

Carrot Ginger Miso Dressing

1 large carrot, peeled and roughly chopped
1 large shallot, peeled and roughly chopped
2 tablespoons roughly chopped fresh ginger
1 tablespoon sweet white miso
2 tablespoons rice wine vinegar
1 tablespoon toasted sesame seed oil
1/4 cup grapeseed or olive oil

2 tablespoons water

Put ingredients in a blender or food processor and blend until smooth. I like to double this recipe so that I can have enough dressing for a few meals.

Tastes wonderful with avocado and butter lettuce.
